Vegan Flat Cakes (pancakes)


These guys are better then the real pancakes with butter, eggs and sugar. At some point on a Monday afternoon, during my routine skulk for food to eat while I do my homework (who does homework WITHOUT food?), I found nothing. I was left with nothing but some oats and a craving for pancakes. I must admit, at first this recipe was not perfect. In fact it was pretty bad, but I knew there was something there with the ingredients and stuck with it through all the trails and tribulations (aka, the bad pancakes). But the one I am sharing today is pretty good. These guys are so so yum yummy, and perfect to whip up if you are feeling hungry for a sweet something, but not too sinful. Literally me, all the time.

Makes: 5 Pancakes
Prep Time: 5 minutes
Cook Time: 5 minutes

Ingredients:

1/2 cup oats
2 Bananas
2 tsp. Vanilla Extract
1/4 cup Almond milk
2-3 strawberries (for on top)
Maple Syrup (because who doesn't want a drizzle all over)

1.  Take the oats and place them in a food processor/ blender (if you don't have one you can still make these pancakes, just be prepared to have full size oats up in your pancakes/ substitute with flour). Blend till it resembles a chunky type of flour.


2. Place in 2 bananas , the vanilla extract, and the milk, and whiz all together (Again, if you don't have a food processor, just mash up the bananas separately then add them to the rest of the ingredients and whisk together until there are no lumps.)


3. Now pour into an easy to pour type of jug, heat up the pan, spray with some oil, and start to cook your pancakes. (Note: these are American style pancakes, NOT crepes)


4. Present on a plate, and top with strawberries and drizzle that maple goodness ALL OVER. Maybe not ALL over, but get a little on there at least. Dig in.
